Ingredients:

  • 4 to 6 Chicken breast halves
  • Salt and pepper
  • 2 tablespoons flour
  • 4 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 3 tablespoons prepared pesto
  • 1/2 cup heavy cream

Preparation:

Wash chicken and pat dry. Put the chicken breasts between sheets of plastic wrap and gently pound to thin to about 1/4 inch thickness. Sprinkle with salt and pepper and dredge lightly with the flour. Heat olive oil in a large skillet over medium heat.

  • 2 1-inch strips of lemon zest

Preparation:

*Instead of cutting the chicken, you can pound each chicken breast half to about 1/2-inch thickness.
Wash chicken and pat dry; sprinkle with salt and pepper and dredge with flour.
In a large skillet over medium heat, melt the butter with the olive oil. Saute the chicken until browned, about 4 to 5 minutes on each side. Remove the chicken and add the garlic and green onions to the skillet. Saute just until slightly wilted and aromatic, about 30 seconds. Add the chicken broth, wine, and lemon zest.
